Rib-Eye Steak with Coffee Rub



Coffee Rub:
1/4 cup finely ground espresso
2 tablespoons spicy paprika
2 tablespoons cane sugar
1 tablespoon dry mustard
2 teaspoons ground ginger
2 teaspoons chili powder
2 bone-in rib-eye steaks, 1.5-inches thick
Olive oil
Salt and ground black pepper


Combine all spices in a bowl and preheat oven to 425 degrees F.

Preheat a cast iron pan over high heat. Rub steak with oil and salt and pepper. Rub a couple tablespoons of the coffee rub onto each side of steak. Cook the steak in the oven until golden brown, about 4 minutes. Flip the steak over, cook for 3 – 4 minutes until medium-rare. Remove from oven and let rest 15 minutes before slicing.
